Spiced Ginger Fig Granola |

This is a good winter granola, simple and spiced. Of course all the ingredients are up to your discretion as far as amounts go, if you like a lot of ginger, add more! Also, if you want something a little sweeter, cut the molasses with honey. I noted this recipe when I was making the granola first hand, enjoy! Ingredients:
5 cups rolled oats |
1 1/2 cups slivered almonds |
1/3 cup molasses |
1 tablespoon ground nutmeg |
1 tablespoon ground cardamom |
1 tablespoon ground cloves |
1 cup crystallized ginger, chopped small |
12 -18 dried figs, also chopped small |
Directions:
1. preheat oven to 300 degrees. 2. Combine oats, Almonds and spices in a large bowl. 3. Give the spiced oats a good toss to combine initially. 4. drizzle the molasses over the top. 5. Get your hands dirty! reach in and mix by hand, a bit of a rubbing motion helps to coat the oats. keep rubbing until the oats are evenly coated. 6. Spread the mix on 2 sheet pans, don't pour it on too thick. 7. toast! Pull the oats out about every 7 min to toss and mix, you want to make sure that their getting toasted evenly. This step will likely take about 30-40min. Toast until everything is brown and crunchy. 8. *its a little hard to tell if your using strait molasses, so after the first 3 pulls, take a nibble to check the texture!*. 9. Add all of your chopped ginger and figs to a large bowl, after the granola has cooled a little toss it in with your chopped goods. 10. after cooled completely store in airtight containers and enjoy! |
