An unusual combination that's as nutritious as it is tasty! Adapted from Real Simple's Broccoli, Sweet Potatoes, and Pears recipe. Ingredients:
1 broccoli stalk |
1 sweet potato |
2 tablespoons olive oil |
1 tablespoon water |
1 pear |
1/4 tsp salt |
1/2 tsp coriander |
1/4 tsp nutmeg |
1 pinch black pepper |
optional |
2 cups cooked jasmine rice |
Directions:
1. 1. Cut the vegetables and pear into chunks or cubes. 2. 2. Heat oven to 500° F. 3. 3. Toss the broccoli and sweet potato with the oil and water in a shallow roasting pan. 4. 4. Place in the oven and roast 20 minutes, turning occasionally, until browned. 5. 5. Add the pear and roast until the vegetables are tender, about 10 minutes more. 6. 6. Remove from oven and toss with the spices. 7. Optional: 8. Serve with Jasmine rice, and enjoy! |
