Spiced Crock-Pot Oatmeal

My own variation on an Alton Brown recipe. Perfect winter comfort food.
Ingredients:
1 cup steel cut oats
4 cups water
1/2 cup half-and-half
1 teaspoon ground cinnamon
1/2 teaspoon ground ginger
1/8-1/4 teaspoon freshly grated nutmeg
1 pinch ground cloves
1/4 cup honey
Directions:
1. Combine all ingredients except honey in a small (2-3 qt) crockpot (the sugar in the honey will tend to burn). Cook on low 6-8 hours without stirring.
2. Stir in the honey, gently, using the handle of a wooden spoon. Serve hot or cold.
