Spiced Couscous With Toasted Pumpkin Seeds |

This recipe is the perfect lighter treat for a seasonal side dish. You can find the pumpkin seeds in the grocery store. Ingredients:
2 tsp. unsalted butter |
1/2 cup white onion, chopped |
1/2 tsp. cinnamon |
1/2 tsp. fennel seeds |
2 cups couscous |
2 cups chicken stock |
2 tsp. olive oil |
1/2 cup green pumpkin seeds |
sea salt and freshly ground black pepper, to taste |
Directions:
1. In a medium saute pan, melt the butter over medium high heat. 2. Add the onion and saute until translucent 3. Add the cinnamon and fennel, saute for two minutes until the mixture is fragrant. 4. Add the chicken stock and bring to a boil. 5. Slowly add the couscous , cover and take the pan off o the heat. 6. Allow to stand for ten minutes. 7. Transfer the couscous to a bowl and fluff with a fork. 8. While the couscous stands, toast the pumpkin seeds in oil in a skillet over moderate heat, stirring constantly, until the pumpkin seeds are puffed and beginning to pop, 4 to 5 minutes. 9. Season with salt. 10. Add the pumpkin seeds to the mixture and season with salt and pepper. |
