A nice zippy change from your usual tomato salad with the jalapenos and ginger. Make these a day or two ahead to really let the flavors develop. From Cooking Light Ingredients:
4 cups cherry tomatoes, halved |
1/3 cup green onions, thinly sliced |
4 cloves garlic, minced |
1 jalapeno pepper, thinly sliced |
1/3 cup balsamic vinegar, the white kind |
1 tablespoon light brown sugar |
1 tablespoon extra virgin olive oil |
2 teaspoons fresh ginger, minced |
1 teaspoon ground cumin |
salt , to taste |
freshly ground black pepper, lots |
Directions:
1. Combine first 4 ingredients in a large bowl. Combine vinegar and remaining ingredients in a small bowl; stir to blend. Pour vinegar mixture over tomato mixture, tossing to coat. Chill. Serve in a clear glass bowl to show off the colors! |
