Makes a great sidedish or vegetarian lunch. Mild in flavour but so good! Ingredients:
1 head cauliflower, cut in bite-sized pieces |
2 onions, chopped |
2 tablespoons vegetable oil |
1/2 teaspoon dry mustard |
1 teaspoon salt |
1/2 teaspoon turmeric |
1/2 teaspoon cumin |
2 large tomatoes, skinned and finely chopped |
1/4-1/2 teaspoon sugar, according to taste |
Directions:
1. Heat oil in a large skillet. 2. Add onion and cook until soft. 3. Stir in the mustard, salt, and turmeric. 4. Cook 3 minutes. 5. Add cauliflower. 6. Stir to make sure it is evenly coated with the onion mixture. 7. Add tomatoes, cumin and sugar. 8. Cover and simmer for 15 minutes. 9. Stir occasionally to keep it from boiling. |
