Zesty carrot side dish. Good with meats or chicken. Ingredients:
2tsp. olive oil |
2 garlic cloves,minced |
11/2tbs chili powder |
1/2tsp ground cumin |
2 lbs carrots(sliced diagonally 1/2 thick) |
1tsp fresh grated lemon zest |
2/3c water |
coarse salt |
2tbs. fresh lemon juice |
Directions:
1. In a large skillet,heat oil over low heat. add garlic and cook till tender,about 2 mins. Stir in chili powder and ground cumin;cook 1 min. Add carrots,lemon juice,water and coarse salt;bring to a boil. Reduce to a simmer;cover,and cook until carrots are tender,15 to 20 mins. Uncover,raise heat to high and cook until any remaining liquid has evaporated,2 to 3 mins.. Stir in fresh lemon juice and serve |
