Ingredients:
4 cups diagonally sliced carrots |
1 cup orange juice |
1/2 cup chicken broth |
1/4 teaspoon allspice |
3/4 teaspoon ground ginger |
1 1/2 teaspoons grated lemons, rind of |
3 tablespoons sugar |
Directions:
1. In a medium saucepan combine carrots, orange juice, chicken broth, allspice, ginger, and lemon peel. 2. Bring to a boil. 3. Stir in sugar, cover, and simmer for 25 to 30 minutes, or until carrots are tender. |
