Spiced Buttercup Squash Soup |

A very good squash soup with a few spices to make it just delectable - Ingredients:
1 buttercup squash, about 3 lb |
1 small onion, minced |
1 tablespoon tomato paste |
1/2 cup milk |
3 1/2 cups chicken stock |
1/8 teaspoon allspice |
1/8 teaspoon nutmeg |
1/4 teaspoon ginger |
1 teaspoon cinnamon |
1/2 teaspoon salt |
pepper |
Directions:
1. Cut squash into chunks. In water, boil squash and onion about 25 minutes. 2. Transfer to a blender and blend until smooth. 3. Put back on stove and add rest of ingredients. Simmer until heated through. |
