Ingredients:
12 ounces chopped dried apricots |
1 1/4 cups sugar |
1 teaspoon ground coriander |
1/2 teaspoon fennel seeds (crushed) |
1/2 teaspoon ground allspice |
1/4 teaspoon ground cloves |
3/4 cup cider vinegar |
1 chopped onion |
1/2 cup golden raisins |
2 tablespoons grated fresh ginger |
1/2 teaspoon salt |
1/4 teaspoon cayenne pepper |
Directions:
1. Cook 12 oz. chopped dried apricots, 1 1/4 cups sugar, 1 tsp. ground coriander, 1/2 tsp. fennel seeds (crushed), 1/2 tsp. ground allspice, 1/4 tsp. ground cloves, 3/4 cup cider vinegar, 1 chopped onion, 1/2 cup golden raisins, 2 Tbsp. grated fresh ginger, 1/2 tsp. salt, 1/4 tsp. cayenne pepper and 3/4 cup water over low heat, stirring until sugar dissolves. Simmer until mixture thickens, stirring occasionally, about 40 minutes. Let cool before serving. |
