Spiced Apple-Pomegranate Cider |

From Cooking Light. A yummy more healthy treat for those cool Fall days and Halloween. Ingredients:
1 gallon apple cider |
6 whole cloves |
5 star anise |
3 pieces lemon rind (2-inch long strips) |
2 cinnamon sticks |
1/2 vanilla bean |
2 cups pomegranate juice or 2 cups cranberry juice |
Directions:
1. Combine first five ingredients in a large stockpot over medium-high heat; bring to a boil. Reduce heat to low. Add the vanilla bean; cover and simmer 15 minutes. 2. Remove from heat; let stand at room temperature for 1 hour or up to 4 hours. Discard solids. Stir in pomegranate juice. Reheat over medium heat until warm. |
