These light yummy muffins are great to go for breakfast or as a light snack, and, because they're made with applesauce, not butter, they're pretty healthy, too! Ingredients:
2 cups flour |
2 tsp baking powder |
1/2 tsp baking soda |
1/2 tsp ground nutmeg |
2 tsp ground cinnamon |
1 cup sugar |
8 oz applesauce (i use musselman's cinnamon applesauce) |
3 large eggs |
2 tsp vanilla |
1 large granny smith apple, diced small |
1 large golden delicious or gala apple, diced small |
Directions:
1. Preheat oven to 350 degrees and grease one muffin tin with cooking spray (I use canola oil spray). 2. Combine flour, baking powder, baking soda, nutmeg and cinnamon in a medium sized bowl, and set aside. 3. In a large bowl, beat sugar, applesauce and eggs together at medium speed until well-blended. 4. Mix in vanilla. 5. Add flour mixture to wet ingredients at little at time, at medium speed, until well-blended. 6. Add apples and mix well. 7. Using a ladle, scoop batter into pre-greased muffin tins and bake for 25 minutes or until a knife or toothpick inserted in the center comes out clean. 8. Cool muffins on rack and store in a cool, dry place. |
