Spiced Apple Carrot Casserole |

Another untried recipe but sounded good on this snowy Michigan day. Ingredients:
2 cups carrots, sliced |
1 tablespoon brown sugar |
1/4 teaspoon ground ginger |
1/8 teaspoon ground nutmeg |
3 apples, peeled and thinly sliced |
1 tablespoon butter |
Directions:
1. Placde 1 inch water in saucepan, add carrots. Bring to boil. Reduce heat; cover and simmer for 7-9 minutes, or until crisp tender. Drain. 2. In small bowl, combine sugar, ginger and nutmeg. In greased 1 1/2 quart baking dish, layer half the apples and carrots. Sprinkle with half the sugar mix. Repeat layers. Dot with butter. 3. Cover and bake at 350 for 30-40 minutes, or until apples are crisp-tender and carrots are tender. |
