Pancakes that taste like gingerbread.......a sweet way to start your day! Ingredients:
1 cup milk |
1 large egg |
1/2 stick butter, melted and cooled |
1 cup old-fashioned oats |
1/4 cup plus 1 tbsp packed brown sugar |
3/4 cup all-purpose flour |
1/4 cup toasted wheat germ |
1 tsp baking soda |
1 1/4 tsps ground ginger |
1 1/4 tsp ground cinnamon |
a scant 1/2 tsp ground cloves |
1 tsp salt |
vegetable oil for griddle |
maple syrup, heated (butter pecan syrup is delicious, too!) |
Directions:
1. In a blender, blend all ingredients except oil until just combined. 2. Heat a griddle over moderate heat until hot enough to make a drop of water scatter over surface. Brush griddle with oil. 3. Working in batches, drop scant 1/4 cup measures of batter onto griddle to form pancakes (4-inch) and cook until bubbles appear on surface and undersides are brown, about 2 minutes. 4. Flip pancakes with a metal spatula and cook until undersides are golden brown and pancakes are cooked through, about 2 minutes. |
