Spice-Rubbed Pork Chops With Chickpea Simmer |

I got this recipe from Canadian Living and my family has enjoyed it ever since. Ingredients:
2 tablespoons fresh parsley, minced |
1 tablespoon ground cumin |
1 tablespoon ground coriander |
1/2 teaspoon salt |
1/2 teaspoon pepper |
2 cloves garlic, minced |
4 center-cut pork loin chops (about 1 3/4lbs) |
1 tablespoon vegetable oil |
1 tablespoon vegetable oil |
1 onion, chopped |
2 cloves garlic, minced |
1/2 teaspoon salt |
1/2 teaspoon pepper |
1 pinch hot pepper flakes |
1 (19 ounce) can chickpeas, drained and rinsed |
1 (28 ounce) can diced tomatoes |
4 cups packed fresh spinach, trimmed |
Directions:
1. CHICKPEA SIMMER. 2. In a large skillet, heat oil over med. 3. heat; fry onion, garlic, salt, pepper and hot pepper flakes until softened, 3 minute Add chickpeas and tomatoes; bring to boil. 4. Reduce heat; simmer 20 minute Stir in spinach. 5. Meanwhile, combine parsley, cumin, coriander, salt, pepper and garlic; rub over chops. 6. In a nonstick skillet heat oil over med-high heat; fry chops, about 10 minute Serve with chickpes mixture. |
