This is the first time I used a cedar plank for cooking fish - and this is the best way to grill salmon as far as we're concerned (also lower fat too) - the salmon came out so moist and spiced just right - the fish doesn't taste spicy at all. Recipe source: local newspaper. Ingredients:
2 tablespoons paprika |
2 teaspoons brown sugar |
1 teaspoon kosher salt |
1/2 teaspoon pepper |
1/2 teaspoon ground ginger |
1/2 teaspoon ground cardamom |
1/2 teaspoon ground cumin |
1/4 teaspoon ground cloves |
1/4 teaspoon ground cinnamon |
1/4 teaspoon cayenne pepper |
4 (6 ounce) salmon fillets (i used 1 whole piece of salmon rather than the 4 small fillets) |
Directions:
1. Soak cedar grilling plank for one hour. 2. Prepare grill. 3. To prepare the rub, combine all ingredients in a small cup or bowl. 4. Rub mixture on the top of the salmon. 5. Place plank on grill, close grill for a few minutes and then place salmon, skin side down, on the plank. 6. Cook covered, for 10 minutes or until salmon flakes. |
