Spice-crusted Shrimp With Lime Rmoulade |

A great way to experiment with Thai food for the first time. Expanding your pallet and using wonderfully smoky spices and the tang of lime. Ingredients:
sauce |
1/4 cup - mayonnaise |
1/4 cup - plain yogurt |
1 1/2 tbs - fresh lime juice |
1 tsp - lime rind |
dash of ground red pepper |
for the shrimp spice mixture |
2 tsp - ground cumin |
2 tsp - paprika |
1 tsp - ground coriander |
1/2 tsp - garlic powder |
salt & pepper |
48 large shrimp, clean and deveined |
olive oil |
Directions:
1. To prepare sauce, combine first 6 ingredients in a bowl; stir with a whisk. Let chill while you prepare the shrimp. 2. To prepare shrimp, combine cumin, paprika, coriander, garlic powder, salt, and black pepper in a Ziploc bag. Add shrimp; toss well. 3. Brush nonstick grill-pan with olive oil and heat over medium-high heat; 4. Add half of shrimp. Cook 3 minutes on each side or until done. Remove shrimp; keep warm. 5. Repeat procedure with remaining oil and shrimp. 6. Serve shrimp hot or cold, I like to serve in martini glasses with the sauce inside the glass. Also makes great leftover’s for salads! |
