Spice Cake With Caramel Frosting |

From Alice Bird Ingredients:
2 1/4 cups cake flour, sifted |
1 teaspoon baking powder |
1 teaspoon salt |
1 teaspoon cinnamon |
3/4 teaspoon baking soda |
1/4 teaspoon ground cloves |
1/16 teaspoon pepper |
3/4 cup shortening |
1 cup sugar |
3/4 cup brown sugar, packed |
3 eggs |
1 teaspoon vanilla |
1 cup buttermilk or 1 cup sour milk |
1/2 cup butter |
3 cups powdered sugar, sifted |
1 cup brown sugar, packed |
4 tablespoons cream |
1 teaspoon vanilla |
Directions:
1. Sift together dry ingredients. 2. Cream together shortening and sugars until fluffy. 3. Add vanilla and then eggs 1 at a time, beating well after each egg. 4. Add dry ingredients alternately with buttermilk. 5. Beat 2-3 minutes using high speed of mixer. 6. Pour into 2 greased and floured 8-in. pans. 7. Bake in 350 degree oven 25-30 minutes. 8. Frost when cool. 9. Caramel Frosting:. 10. Melt butter in saucepan then add brown sugar and cook over low heat 2 minutes, stirring constantly. 11. Add cream and continue stirring until mixture comes to a boil. 12. Remove from heat. 13. Gradually blend in powdered sugar and vanilla. 14. (Add extra cream if needed.). |
