From Desperada via comes this spice cakes recipe dating to the 1930's. Ingredients:
2 cups sugar |
2 cups strong coffee or water or apple juice |
1/2 cups shortening |
2 cups dark raisins or diced pitted prunes |
1 apple, peeled and shredded |
2 cups all-purpose flour |
1 teaspoon baking soda |
2 teaspoons baking powder |
1 teaspoon cinnamon |
1 teaspoon allspice |
1 teaspoon cloves |
1 teaspoon nutmeg |
1 cup nuts, chopped (your choice) |
Directions:
1. Preheat oven to 350 degrees F. 2. Using a medium saucepan, simmer together the sugar, coffee, shortening, raisins and apple for 10 minutes. 3. Cool for 10 minutes. 4. In a large bowl, mix together flour, baking soda, baking powder, all the spices and the nuts. 5. Pour the cooled sugar mixture into the dry ingredients. 6. Mix well. 7. Pour batter into a greased 13x9x2 baking pan. 8. Bake for 25 to 30 minutes OR until cake tests done. |
