I clipped this from the newspaper many years ago, because it sounded good. It is not your traditional spice bar - it has coconut and walnuts, which is why I am adding it here. Ingredients:
1/2 cup butter, melted |
1 cup flour |
2 eggs, beaten |
1 cup brown sugar |
1 teaspoon cinnamon |
1/4 teaspoon nutmeg |
1/4 teaspoon baking powder |
1 pinch salt |
1 teaspoon vanilla |
2 tablespoons flour |
1 cup walnuts, chopped |
3/4 cup flaked coconut |
Directions:
1. Preheat oven to 350*. BASE - Combine butter and flour, mixing well. Spread in a 8 pan. Bake 12-15 minutes, until firm. Remove from oven. 2. FILLING - Combine eggs, brown sugar, spices, baking powder, salt, vanilla and flour. Stir in the walnuts and coconut. Spread over base. 3. Bake 350* for 25-30 minutes, until golden and firm. Cut into 1 x 2 bars. |
