Delicious for after school or for lunch boxes. Recipe source: Bon Appetit (April 1982) Ingredients:
1 1/2 cups flour |
1 cup sugar |
1/2 cup milk |
1/2 cup corn oil |
2 eggs |
1 teaspoon salt |
1 teaspoon baking soda |
1 teaspoon cinnamon |
1 teaspoon clove |
1/2 cup chopped walnuts (optional) or 1/2 cup pecans (optional) |
1/2 cup raisins |
1 cup powdered sugar |
1/2 cup hot water, use only as much as needed |
Directions:
1. Preheat oven to 375-degrees F. 2. Spray a 10 x 15-inch cookie sheet with sides or a jelly roll pan with non-stick cooking spray (Pam) or grease pan. 3. Combine first 9 ingredients (flour- cloves) in large bowl and stir to combine. 4. Stir in nuts (if using) and raisins. 5. Spoon batter into prepared pan, spreading evenly with a knife or spatula. 6. Bake for 20-30 minutes or until golden brown. 7. Cool bars in pan on rack for 10 minutes while preparing icing. 8. To prepare icing: blend powdered sugar with water in a small bowl until smooth. 9. When bars cooled for ten minutes or so, spread icing over bars. 10. Let bars finish cooling before cutting. |
