Not necessarily authentic but very quick and tasty Ingredients:
2 teaspoons olive oil |
2 garlic cloves, minced |
kidney bean (drained and rinsed) |
1/4 cup vegetable stock |
1/4 cup cilantro, chopped |
1/2 teaspoon cumin |
1/8 teaspoon chili pepper |
1/2 ripe tomato, chopped |
Directions:
1. In a small pot heat oil over med-hi heat. Add garlic and saute for 2 minutes. Add remaining ingredients and simmer over med-lo heat for 15 minutes, stirring regularly. 2. Give it a whir with an immersion blender to get a good consistency and serve. |
