Ingredients:
4 (6.5-inch) low-fat flour tortillas |
cooking spray |
1/2 pound pork tenderloin, cut into short, thin strips |
1 teaspoon minced garlic |
1 teaspoon ground cumin |
1 (15.5-ounce) can black beans, rinsed and drained |
1/2 cup chunky salsa |
2 cups shredded romaine lettuce |
1/2 cup (2 ounces) pre-shredded reduced-fat cheddar cheese |
1 cup chopped tomato (about 1) |
1/4 cup fat-free sour cream |
Directions:
1. Preheat oven to 375°. 2. Lightly coat both sides of tortillas with cooking spray. Bake at 375° for 7 to 8 minutes or until golden. 3. Place a large nonstick skillet coated with cooking spray over medium-high heat until hot. Add pork, garlic, and cumin; sauté 3 minutes or until pork is browned. Add beans and salsa; simmer 4 minutes or until pork is tender. 4. Top tortillas evenly with lettuce, pork mixture, cheese, tomato, and sour cream. |
