An easy and tasty side dish that combines one of the most nutritious veggies and quick-cooking instant rice. Ingredients:
1 lb fresh spinach, washed and chopped or 1 (10 ounce) package frozen chopped spinach |
1/4 cup butter |
3 cups instant rice |
2 1/3 cups water |
2 teaspoons salt |
1/2 teaspoon oregano |
6 green onions, sliced |
2 tablespoons parsley, chopped |
2 tablespoons lemon juice |
1/2 cup parmesan cheese, grated |
Directions:
1. If using fresh spinach, drain well. If using frozen spinach, thaw and drain well. 2. In a large pan, saute spinach in butter for 2 to 3 minutes. 3. Stir in rice, water, salt and oregano; bring to a boil. Cover and simmer until all liquid is absorbed, about 5 minutes. 4. Stir in onion, lemon juice and parsley; heat through. 5. Sprinkle with parmesan cheese when serving. |
