Speedy Cowpoke Beans Redux |

I love my cowpoke beans cooked from scratch. But unexpected company showed and I needed a menu fast. So I dug into the hurricane food supply and came up with this quick dish. Ingredients:
2 cans of pinto beans, drained and rinsed |
1 can of black beans, drained and rinsed |
4 slices of bacon, diced and fried |
5 cloves of garlic |
1 can of tomatoes and green chilies (mild) |
1 can of beer |
1 tbsp of chili powder |
1 tsp of cumin powder |
Directions:
1. Drain and rinse beans. 2. In a deep sauce pot, cook the bacon til crisp and render out all fat. 3. Saute garlic in fat. 4. Dump in beans, beer, tomatoes and seasonings. 5. Cook over medium-low heat for 30 to 45 minutes to reduce the liquid and concentrate the flavors. 6. ******Note, no onions in the recipe unlike the scratch recipe, 7. my friends are extremely sensitive to onions and I adapted the heat level for them too***** |
