Speedy Chilaquiles Skillet |

this is my easy version of an authentic mexican dish. it is great to make with what you have already in the pantry and fridge and it is inexpensive. Ingredients:
3 potatoes, scrubbed and diced (i leave the peel on) |
1 half onion, diced |
2 cloves garlic, minced |
1 c old tortilla chips, broken up |
6 eggs |
1/4 c milk |
2 tsp cumin |
1/4 tsp cayenne pepper |
2 tsp chili powder |
1 tomato, chopped and seeded |
1/4 c chopped cilantro |
Directions:
1. nuke potatoes in microwave 3 mins. stir and nuke another 3 mins 2. meanwhile, heat oil in skillet over med heat 3. add onions, garlic, and tortilla chips 4. saute 5- 10 minutes depending on how soft you want your chips(you may add more oil here) 5. add potatoes to skillet and cook 2 mins 6. beat eggs with milk and add spices and tomato 7. pour into skillet 8. gently scramble eggs 9. top with cilantro |
