Juicy jumbo shrimp turn this simple supper dish into something really special. Ingredients:
7 ounces linguine or 7 ounces spaghetti |
1 ounce butter |
7 ounces jumbo shrimp, raw and peeled |
1 garlic clove, crushed |
salt and pepper |
7 tablespoons white wine |
1 teaspoon lemon juice |
1 pinch chili flakes (optional) |
1 tablespoon flat leaf parsley, roughly chopped |
Directions:
1. Cook the pasta in a large pan of boiling, salted water according to pack instructions. 2. Meanwhile, heat a small knob of the butter in a frying pan. When it starts to sizzle, add the shrimp and fry for 1 min until they start to change colour. 3. Add the garlic and chili flakes if using and sizzle for 1 min more, splash in the wine, then bring to the boil. 4. Swirl in the rest of the butter, season with salt and pepper and a squeeze of lemon juice, then stir in the chopped parsley. 5. When the pasta is just cooked, drain and toss through the shrimp. 6. Divide the pasta between 2 bowls, pour over any excess sauce and serve straightaway. |
