SPECIAL POTATO SALAD Ingredients:
1 lb. new potatoes |
pinch of salt |
4 rashers back bacon |
bunch of spring onions, chopped |
dressing; 2 tblsp red wine vinegar |
3 tblsp olive oil |
1 teaspoon mustard powder |
2 tblsp chopped fresh mint |
Directions:
1. COOK POTATOES IN BOILING WATER WITHTHE SALT FOR 15 MINUTES. 2. MEANWHILE COOK BACON UNDER HOT GRILL UNTIL CRISP, CHOP INTO SMALL PIECES 3. PUT IN BOWL WITH CHOPPED SPRING ONIONS 4. ADD POTATOES 5. PUT DRESSING INGREDIENTS INTO A SCREW TOPPED JAR AND SHAKE WELL. 6. POUR OVER POTATO SALAD, TOSS AND SERVE. 7. THIS POTATO SALAD CAN BE SERVED HOT OR COLD, AS DESIRED. IF YOU PREFER IT COLD, ADD THE DRESSING JUST BEFOE SERVING. |
