This really brings up average slaw quite a notch. Champagne vinegar and fresh cut basil blends well. I usually serve with with grilled steaks and chicken and I get recipe requests for this. There are no carrots in this recipe but I suppose they can be added if desired. Ingredients:
1 medium head of green cabbage |
2 tbs chopped red onion |
4-5 large fresh basil leaves cut in chiffonade |
mayonnaise to bind ( usually a cup or less ) as desired |
few splashes of champagne vinegar |
2 tsp sugar ( or splenda ) or to taste |
salt and pepper to taste |
Directions:
1. Mix cabbage with onion and basil 2. Mix in mayo to desired consistency 3. Add champagne vinegar to taste 4. Add sugar to taste 5. Mix well and salt and pepper to taste 6. Note: sprinkle if desired with more chopped basil and red onion as a garnish |
