A wonderful recipe I found in a Thai cookbook. It is so full of flavor. Probably one of the best Chow Mein dishes I have eaten. Ingredients:
3 tblspns vegetable oil |
2 cloves garlic - thinly sliced |
1 tsp fresh ginger root - chopped fine |
2 red chillies - chopped fine |
4 oz ham - sliced into thin strips |
1 boneless chicken breast - sliced into thin strips |
16 uncooked tiger prawns - peeled & deveined. tails left on |
4 oz fresh green beans |
8 oz bean sprouts |
2 oz chives (garlic chives if you can get them) |
1 lb chinese egg noodles - cooked in boiling water til tender |
2 tblspns soy sauce |
1 tblspn oyster sauce |
salt & black pepper to taste |
1 tblspn sesame oil |
2 spring onions for garnish |
Directions:
1. Heat 1 tblspn of the oil in a wok or large frying pan. 2. Stir-fry the garlic, ginger & the chillies for just a few seconds. 3. Add the ham, chicken, prawns & beans & stir-fry for about 2-3 mins on high heat or until the chicken & prawns are cooked. 4. Transfer to a bowl & set aside. 5. Heat the rest of the oil in the same wok & stir-fry the chives & the beansprouts for 1 - 2 mins. 6. Add the noodles, soy sauce, oyster sauce, salt & pepper & toss. 7. Return the prawn/chicken mixture to the wok & toss all together with the sesame oil. 8. Serve, garnished with the slivered spring onions. |
