Very convenient since this is put together the night before. I add a couple cups of diced ham to the casserole. You can also add crumbled, cooked bacon or some browned sausage. I tried to include this as optional , but couldn't not get the recipe to publish. Ingredients:
10 eggs |
1 pint cottage cheese |
1 lb monterey jack cheese, shredded |
1 (7 ounce) can diced green chilies |
1 teaspoon baking powder |
1/2 teaspoon salt |
1/2 cup melted butter |
1/2 cup flour |
1 (8 ounce) can sliced sliced & drained mushrooms (optional) |
Directions:
1. Melt butter in a 9x13 baking dish in oven. 2. Beat eggs until lemony. Add flour, baking powder, salt, cottage cheese, Monterey jack cheese, chilies and meat and mushrooms (if using). Mix well. 3. Pour into baking dish and chill overnight/. 4. Bake at 350 for 35-40 minutes or until knife inserted in the middle tests done. 5. Cooking and prep times do not include the overnight refrigeration. |
