Spearmint Ice Cream

Based on a Martha Stewart recipe: Refreshing ice cream using spearmint frm the garden. Your ice cream will be a pale green.
Ingredients:
1 cup fragrant spearmint leaves
1 cup whole milk
2 cups heavy cream
2 large eggs
3/4 cup sugar
Directions:
1. Cover mint with water and bring to a boil and simmer to soften leaves.
2. Drain well, pressing out excess moisture from leaves.
3. Puree mint in food processor.
4. In a saucepan, add the pureed mint and cream and heat but do not boil.
5. Add the eggs and sugar and cook and stir constantly until mixture coats the back of a spoon. Do not boil.
6. Place mixture over a bowl of ice water to cool down.
7. Chill mixture well in the refrigerator.
8. Process chilled mixture in ice cream maker according to manufacturers direction.
9. Chill very well.
