Spareribs in Black Bean Sauce |

Had this recipe about 30 years, still one of my favorite and a hit at family get togethers. Found it in an Hawaiian-Chinese cookbook. Ribs are the sweet and sour kind. Black beans are the ones in plastic bags in the Asian section. Bottled black beans don't work as well. Ingredients:
3 lbs spareribs (cut up) |
1/2 cup flour |
3 tablespoons oil |
2 tablespoons black beans (soaked in water 2 mins. drain and mash lightly) |
3 garlic cloves (minced) |
2 tablespoons shoyu |
2 tablespoons oyster sauce |
1 tablespoon sugar |
1 (14 1/2 ounce) can chicken broth |
1 cup water |
1 chicken bouillon cube |
1/4 cup cornstarch |
1/4 cup water |
green onion |
cilantro |
Directions:
1. Parboil spareribs. Rinse and drain well. 2. Dredge in flour lightly. 3. Heat oil in heavy pan. 4. Stir fry black bean mixture. Add spareribs and brown. 5. Add seasoning while browning spareribs. 6. Add broth. Bring to boil. Cover and simmer for 45 minutes. 7. Thicken with cornstarch mixture. 8. Garnish. |
