Mild white fish in a savory tomato and olive sauce. Ingredients:
2 tablespoons olive oil |
1/2 cup onion, diced |
1 garlic clove, minced |
1 (14 ounce) can italian stewed tomatoes |
1/4 cup green olives, sliced |
1/4 cup black olives, sliced |
1/2 lemon |
1/4 cup dry white wine |
1/4 teaspoon black pepper |
16 ounces tilapia fillets |
Directions:
1. Heat oil over medium high heat in skillet. Add onion and garlic. Cook for 5 minutes. 2. Add tomatoes, olives, lemon, wine and black pepper. Simmer 10 minutes. 3. Place fish in sauce and simmer 5-7 minutes or until fish is done. 4. Serve over rice or pasta. |
