Southern Living; family favorite Ingredients:
1/2 lb bacon |
1 dozen egg, beaten |
1 (4 ounce) can chopped green chilies, drained |
1 (4 ounce) jar diced pimentos, drained |
1 teaspoon salt |
1/2 teaspoon black pepper |
1/2 teaspoon cayenne pepper |
4 -5 green onions, chopped |
1 large tomato, chopped |
1 (4 1/2 ounce) jar sliced mushrooms, drained |
1/4 cup butter or 1/4 cup margarine |
Directions:
1. Cook bacon in a large skillet. 2. Remove bacon; crumble and set aside; discard drippings. 3. Combine eggs, chiles,pimento, salt, and peppers; set aside. 4. Saute onion, tomato, and mushrooms in butter until tender. 5. Add egg mixture; cook over medium heat, stirring often, until eggs are firm but still moist. 6. Spoon onto serving platter; garnish with crumbled bacon. |
