Refreshing, easy and creamy. Pol Martin Cookbook. Ingredients:
1 bunch fresh watercress, washed and well dried |
1 boston lettuce, washed and well dried |
2 endives, washed and well dried |
1 apple, cored and sliced |
1 cup cantaloupe, balls |
2 tablespoons tarragon vinegar |
2 tablespoons mayonnaise |
2 tablespoons sour cream |
1/2 lemon, juice of |
1 pinch sugar |
salt, to taste |
black pepper, to taste |
Directions:
1. place watercress in large bowl. tear boston lettuce leaves into pieces and add to bowl along with endives. 2. add apple slices and cantaloupe balls, season well. 3. mix together vinegar, mayonnaise, sour cream, lemon juice and sugar in small bowl. season well and pour over salad ingredients. 4. toss until evenly coated, and serve. |
