Spanish Roasted Potatoes With Poached Eggs

A very different yet very tasty potato dish. My friend Mona made these for us just last night at her card party and it was such a big hit. She served it with pecan crusted salmon, spinach salad and key lime pie. Read more . Great meal. Enjoy
Ingredients:
4 russet potatoes washed dried and cut into 1” chunks
1/4 cup olive oil
1 teaspoon sea salt
1 teaspoon smoked paprika
1/2 teaspoon garlic powder
4 eggs poached
1 teaspoon chopped italian parsley
Directions:
1. Preheat oven to 400.
2. Place potatoes in large mixing bowl then add olive oil, salt, paprika and garlic powder.
3. Toss well until mixture turns a deep mahogany red then place in cast iron pan.
4. Roast 30 minutes then using a metal spatula carefully turn potatoes over.
5. Be sure to scrape the great crust that is forming on the bottom.
6. Return to oven for 30 more minutes or until they are nice and crisp.
7. Remove from oven then place roasted potatoes on plate and top with poached eggs.
8. Sprinkle with chopped Italian parsley and serve.
