1 serving Ingredients:
1 medium fresh tomato |
1/2 bell pepper, green |
1/2 small onion |
1 clove garlic |
2 oz. small, fresh or frozen shrimp |
1/3 tbsp. olive oil |
1/4 tsp. saffron |
3 tbsp. brown rice |
1/4 cup hot water |
3 tbsp. water |
Directions:
1. Rinse and chop tomato, onions and bell pepper; mince garlic and set aside. If using fresh shrimp peel, devein and rins or defrost and rinse frozen shrimp; set aside. Dissolve saffron in hot water and set aside. In a non-stick saucepan, heat oil on medium; add onion, pepper and garlic; sauté until onions are translucent. Add rice and saute 3-4 minutes, until rice is golden; reduce heat and add tomatoes and saffron water to just cover the rice. Cover rice and let simmer until almost dry, about 20 minutes. Add shrimp and remaining water, cold, a little at a time, cooking over low heat until fluffy. Serve. |
