SPANISH RICE WITH BEEF This recipe came from an estate sale. I obtained it when I purchased the family collection from the Staley Estate in Wills Point, Texas in 1982. Ingredients:
1 pound lean ground beef |
1 cup regular rice uncooked |
16 ounces stewed tomatoes |
2 cups water |
1/2 teaspoon oregano |
1/8 teaspoon freshly ground black pepper |
2/3 cup green bell pepper chopped |
5 bacon slices cooked crisp and crumbled |
1 teaspoon chili powder |
1-1/4 teaspoon salt |
Directions:
1. Cook and stir meat and onion in a large skillet until meat is brown. 2. Drain off excess fat then stir in remaining ingredients. 3. Heat mixture to boiling then reduce heat and simmer covered stirring often for 30 minutes. |
