Recipe from First Place -(a diet). I usually double the recipe. It is a family favorite. Ingredients:
1 lb lean ground beef |
1 medium onion, chopped |
1 medium bell pepper, chopped |
2 (16 ounce) cans stewed tomatoes, undrained |
1 cup long-grain white rice, uncooked |
1 cup water |
1 1/2 teaspoons chili powder |
3/4 teaspoon dried oregano |
1/2 teaspoon salt |
1/4 teaspoon red pepper |
1/8 teaspoon garlic powder |
Directions:
1. Cook ground beef, onion, and bell pepper until browned. 2. Drain in colander and pat dry with a paper towel (to remove drippings). 3. Return meat mixture to stove and stir in remaining ingredients. Bring to a boil, cover, reduce heat, and simmer for 30 minutes or until rice is tender, stirring occasionally. |
