                    Add bacon to this zippy rice dish for a flavorful change of pace.  Ingredients: 
                    
                        
                                                6 strips bacon,diced  |  
                                                1 tbs canola oil  |  
                                                1 med. onion,chopped  |  
                                                1 c uncooked long grain rice  |  
                                                1 3/4 c water  |  
                                                2 large tomatoes,chopped  |  
                                                1 med green pepper,chopped  |  
                                                2 jalapeno peppers,seeded and chopped  |  
                                                1 tsp chili powder  |  
                                                1/2 tsp salt  |  
                                                
                     
                    Directions: 
                    
                        
                            
                                1. In large skillet,cook bacon over med heat until crisp. Remove and drain. Add oil to drippings;saute onion 3 mins. Add rice;stir until golden brown,about 5 mins. 2. Stir inremaining ingredients. Bring to boil. Reduce heat;cover and simmer for 30 mins or till rice is tender.                              |
