This quick and easy recipe may be done on the stove top as well if one does not have a pressure cooker I just used the rice setting on my electric pressure cooker for this spicy tasty rice side dish. Add seasonings and additions as desired. Ingredients:
2 cups long grain rice, ( such as uncle ben's parboiled converted rice ) |
1 3/4- 2 cups liquid ( broth, water, v-8 or tomato juice etc) |
1/4 cup salsa- i used medium hot |
15 oz can diced tomatoes and their juice ( i like the rotel brand with jalapeno peppers ) |
1 large onion chopped |
1 small green bell pepper chopped |
1 1/2 tsp garlic powder |
1-2 tsp chili powder or to taste |
salt and pepper to taste |
Directions:
1. Place all ingredients in a pressure cooker 2. Use rice setting- mine was 10 minutes in the electric pressure cooker 3. Allow pressure to cool down naturally 4. If rice is to dry stir in some liquid such as tomato sauce, tomato juice, V-8 juice etc 5. Optional additions: canned mushrooms, pieces of cooked meat etc. may be added as desired. |
