Ingredients:
2 teaspoons vegetable oil |
1 cup chopped onion |
1 cup chopped green bell pepper |
2 garlic cloves, minced |
1 2/3 cups uncooked instant rice |
2 (14 1/2-ounce) cans diced tomatoes, undrained |
1 (5 1/2-ounce) can tomato juice |
2 teaspoons chili powder |
1 teaspoon ground cumin |
1/2 teaspoon hot sauce |
1/4 cup chopped fresh cilantro |
Directions:
1. Place a large saucepan over mediumhigh heat until hot; add oil. Add onion, bell pepper, and garlic; cook, stirring constantly, until tender. Stir in rice and next 5 ingredients. Bring to a boil; cover, reduce heat, and simmer 7 minutes or until liquid is absorbed. Remove from heat. Let stand, covered, 5 minutes. Stir in cilantro. |
