This dish is a favorite ofmy husband and my neighbors. I usally have to make it at least once a week. His freinds love it too. Ingredients:
3/4 cups long grain rice |
1 (14 oz.)can diced tomatos with chilis |
2 chicken boullion cubes |
2 tomato boullion cubes |
1/2 med. onion, chopped |
2 cloves garlic,chopped fine |
4 cups water or chicken stock |
1/4 cup olive oil or veg. oil |
1/2 tsp. ground cumin |
1/2 tsp ground corriander |
Directions:
1. In a Medium sauce pan add your oil,onion, garlic,and rice, stirring constantly until onin is translucent over medium high heat. 2. Add all other ingredients to pan and cover. 3. Wait until it starts to boil ,then turn heat to low cook for 15 minutes. 4. Remove from heat and let stand for 5 minutes to absorb any liquid left and serve. |
