This rice recipe a perfect side to any mexican dish and it is so easy and inexpensive.
Ingredients:
1 cup rice (i like mahatma)
3 cloves garlic thinly sliced
chicken bouillon (i like knorrs powdered not squares)
1 small can tomato sauce
3 slices yellow onion
1/2 green pepper diced
evoo
1 and 1/2 cups water
Directions:
1. In a non stick pan heat 2-3 tbsp EVOO and saute rice til just golden
2. Add the bouillon to the water to mix and add with remaining ingredients
3. Cover and simmer for 20 minutes
4. I find sometimes you need to add a little more water towards the end of cooking depending on the rice but this is a generally foolproof recipe.
