Goes great with taco's and refried beans. Ingredients:
1 tbs of veg. oil |
1 cup of long grain white rice |
2 1/2 cups water |
1 medium onion diced |
1 can diced tomatos with green chili (do not drain) |
1/3 cup diced celantro |
1 garlic clove diced finely |
salt to taste |
pepper to taste |
Directions:
1. Put 1 tbs. of veg. oil in frying pan on med high heat 2. pour the rice into the frying pan with oil and brown the rice by stiring constantly to a golden brown 3. when rice is browned pour the water into the pan and turn down heat to low 4. add onion,diced tomatos with green chili, celantro, garlic, and salt and pepper 5. Cover and let simmer for about 25 to 30 minutes stiring occasionally |
