This is a great side dish or can be served as the main course! Ingredients:
1 cup chicken broth |
1 cup tomato sauce |
1/2 cup onions, diced |
6 slices bacon |
2 tomatoes, diced |
1 green pepper, diced |
1 cup uncooked white rice |
1 teaspoon chili powder |
1/2 teaspoon salt |
1/2 teaspoon pepper |
1 (10 ounce) can whole kernel |
corn, drained (optional) |
Directions:
1. In a large skillet over medium heat, cook bacon until evenly brown 2. Chop bacon, and set aside, reserving the bacon fat 3. Put onion in skillet, and saute until tender 4. Stir in rice, and cook until lightly browned, 3 to 5 minutes 5. Meanwhile... 6. In a small saucepan over medium heat, combine chicken broth and tomato sauce and bring to a boil 7. Then pour in boiling chicken broth and tomato sauce into skillet 8. Add the diced tomatoes, green peppers, and chopped bacon stir well to combine 9. Season with chili powder, salt, and pepper 10. Cover, and simmer for 30 to 40 minutes 11. Stir in corn and heat 15 minutes longer 12. Serve! |
