A healthy side using brown rice instead of traditional white rice. Ingredients:
2 cups cooked brown rice |
1 1/2 cup chopped celery |
1 cup chopped onion |
2/3 cup vegetable broth |
2 tablespoons tomato paste |
black pepper to taste |
1/2 to 1 tsp red pepper flakes (to taste) |
Directions:
1. Cook celery and onion in vegetable broth in a covered pan over medium heat until the vegetables are tender. 2. Add cooked rice, tomato paste, pepper and red peppr flakes, stirring well. 3. Heat through and serve. |
