I liked this spanish rice so much. When I visited Costa Rica, the native served me Arroz con pollo. This rice was so simple to make and goes with any meat -such pollo, picadillo, carne deshilachado.. Ingredients:
4 cups long grain white rice |
1 cup chopped onion |
1/2 cup chopped red pepper |
1/4 cup chopped celery leaves |
1 cup chopped tomatoes, seeded |
1 cup vegetable oil or grape oil |
Directions:
1. Heat oil in a large saucepan over medium heat. carefully add tomatoes, onion, red pepper, celery leaves. 2. Simmer, uncovered, over medium heat and stir for 15-20 mins until the oil is nearly absorbed. 3. In a large pot, combine washed rice and water according to the package. add the sauted vegitable over the rice. 4. Bring to boil over medium high heat; reduce heat and simmer over low heat for 15-20 mins or until liquid is nearly absorbed. 5. Remove from the heat and let stand about 10 mins befor serving. 6. Fluff rice with fork before serving. 7. * I use rice cooker* |
