Spanish Rice with chicken stock. Ingredients:
1 tbsp olive oil |
1 cup uncooked rice |
2 cups chicken stock |
1/2 small red bell pepper, seeded and chopped |
2 tbsp salsa |
1/2 small onion, chopped |
1 garlic clove |
1 teaspoon salt |
Directions:
1. Heat theoil onhigh in a medium sized frying pan 2. Add and fry the rice until it just starts to brown (don't overcook) 3. Add the tomato sauce, and stick, stir. 4. Add the garlic and onion, stir. 5. Reduce heat, cover and simmer until the water cooks off (about 40 minutes) stirring occasionally. |
